Reflection:

I hydrate my body in many ways. When I am hydrated, I feel so good. I am happy to have discovered that one of the quickest ways to hydrate, is by eating cucumbers. Cucumbers are perfect for me. They are so very hydrating. When I eat them, my skin shines; I feel so much younger. They rejuvenate me. They are mostly water. My body loves them. I thrive when I eat them. I know and feel that they are hydrating me at the deepest level. They cool me off. Cucumbers are beneficial too. They are full of electrolytes, enzymes, coenzymes, chlorophyll and minerals and vitamins. They nourish my cells. They are also healing. They flush me of toxins. They calm me down. They are easy to grow. I grow my own in the summer. Like me, they love the sun. I like watching them grow. I juice them, noodle, them, and slice them. Sometimes I eat them whole. Just biting into one makes me happy. I love the crunch of a cucumber.

I am sharing one of my favorite recipes with you today. My “Oh So Hydrating Cucumber Salad.” If you try it, let me know. I think you’ll really like it.

Recipe:

Oh So Hydrating Cucumber Salad

Items Needed to Create:

  • A measuring cup

  • A measuring tablespoon

  • A large bowl

  • A knife

  • A citrus press

  • A cutting board

Ingredients:

  • 1 English Cucumber sliced thinly

  • 30 g of Spicy Asian Mustard Microgreens

    • 2 T Raw Hulled Hemp Hearts

    • 1 T lacuma powder

    • 1 T coconut aminos

    • 1 T dried thyme

    • 1 T shredded dulse

    • 2 to 3 sliced spring onions.

    • 3 T clean water

    • The juice of 1 to 2 limes

Directions:

Add the lacuma, thyme, aminos, dulse, lime juice, and water into a measuring cup. Mix. Add the onions and mix again.

Combine the microgreens and cucumber in a large bowl. Pour the sauce over. Mix. Add the hemp hearts to the top.
