Reflection:

Food is important. Food is basic. It is one of the components that we need to stay alive. Food also determines our quality of life. Food either harms us or helps us, having a poisonous, toxic affect on our bodies or serving to nourish and heal. Ripe, fresh, organic, whole foods are easy to digest, leave no toxic residues, and energize our bodies causing us to radiate health. On the other-hand, chemically-laden, processed foods poison our bodies, impede natural flow, and lead to disease and early death. Keep a journal and make notes of what you eat, and how your body responds. Of course if you haven’t been choosing well lately, you will need to allow time for your body to eliminate the toxic build up before you get an accurate account. Be patient, and trust in the healthy choices and watch as your body transforms! This endeavor will be quite illuminating! Our food choices also directly impact the environment. Yes. It is true. While the foods we choose to eat are so very important to our well-being, they are also important to the well-being of the world. When we choose organic foods, we support organic farmers whose farming techniques harmonize with the Earth flow. When we choose plants, the demand on the water supply decreases significantly. A documentary that highlights the benefits of choosing plant-based that I highly recommend is Conspiracy. If you love the Earth, and want to help save the Earth, make time to watch this. In 2015, I had a realization about food which involved a complete paradigm shift. Since then, I have been eating a low-fat-plant-based- whole-foods diet, and I have thrived, and I am happy to say that I am caring for the Earth with my healthy choices too: we both benefit.

The recipe I am giving to you today is a snack that I eat often. It is easy to make, it boosts my mood, and it is satisfying and tasty. This fruit and the greens blend work together to give lasting energy. Enjoy!

Recipe: My Spicy Lunch Smoothie

  • 1 banana

  • 1 cup blueberries (When I can, I choose the wild variety)

  • 33 g brassica mix microgreens (any will do. I like to use broccoli or kale)

  • 1 T chia seeds

Optional: 3 pitted dates

Putting it together:

  • Blend the first 3 ingredients (and the dates if you are including them). Add little water to blend if needed - 1 -3 T.

  • Pour 1/2 of the mix in an 8 oz jar.

  • Add the chia seeds

  • Add the remaining mixture.

  • Cover and let sit for 2 to 3 hours.

  • Grab a spoon and enjoy.

Note: If you wish - you can add a few whole berries as a topping.

I am thankful for the energy it gives me. I am grateful for the health my food restores and maintains in my body. I am grateful for how I feel after I enjoy this pudding. I am thankful that the food that I choose to eat is cruelty free. I am thankful that the food that I choose to eat also is good for the planet. I am thankful for the abundance.
